Phones, tablets and kitchen screens talk to the main station over mutual TLS. Each device has its own certificate. From outside, an encrypted relay carries traffic it cannot read.

Does my data go through your servers?
No. Your data stays on your main station. The relay only carries encrypted traffic it cannot read.
What if a phone is stolen?
You revoke the device from the main station; it can no longer connect.
What does the audit log record?
Product changes, ticket cancellations and refunds, removed items, discounts, payments and transfers.
